Ingredients

  • 2 packages Bob Evans Original Mashed Potatoes
  • 2/3 cup all purpose flour
  • 2 large eggs
  • 1 large egg yolk
  • Salt and pepper (optional)
  • 1 cup pepper jack cheese shredded
  • 48 ounces vegetable oil
  • Ketchup to serve (optional)

Instructions

  1. Stir together potatoes, flour, eggs, egg yolk, and cheese in a bowl until blended. Season with salt and pepper, if desired.
  2. Shape potato mixture into 1½-inch logs and place on a parchment paper-lined baking sheet. Freeze tots at least 4 hours.
  3. Pour oil to a depth of 4 inches in a large Dutch oven. Heat to 360°F on a deep fry thermometer.
  4. Fry frozen tots, in batches, 4 to 5 minutes, turning occasionally, until golden brown. Drain on a wire rack over paper towels. Sprinkle with kosher salt and serve with ketchup, if desired.
